تأثیر مخمر ساکارومایسس سرویزیه بر میزان کاهش سم قارچی سیترینین در آرد گندم

زمینه و هدف: سیترینین مایکوتوکسین تولید شده توسط قارچ های رشته ای توکسین زا می باشد. مخمر ساکارومایسس سرویزیه دارای توانایی متصل کردن مایکوتوکسین ها به دیواره سلولی خود و در نتیجه کاهش سمیت آن است. هدف از این مطالعه تعیین میزان سم قارچی سیترینین و کاهش این سم قارچی در آرد گندم به وسیله ساکارومایسس سرویزیه می باشد.
روش بررسی: در این تحقیق 15 نمونه آرد گندم به صورت تصادفی ساده از نانوایی های شهرستان بابل جمع آوری شدند. میزان آلودگی به سیترینین در نمونه ها توسط روش اﻻﻳﺰای ﻣﺴﺘﻘﻴﻢ رﻗﺎﺑﺘﻲ اندازه گیری و ساکارومایسس سرویزیه به آرد گندم افزوده شد. میزان آلودگی سیترینین در نمونه ها برای بار دوم نیز اندازه گیری شد. جهت تجزیه و تحلیل آماری نرم افزار آماری SPSS نسخه 18، آزمون کلموگرف-اسمیرنوف و تی زوجی استفاده شد. سطح معنی داری برای کلیه آزمون ها کمتر از 05/0 در نظر گرفته شد.
یافته ها: بیشترین و کمترین غلظت این سم در نمونه های مورد بررسی به ترتیب ppb 5/35 و 1/1 و بعد از تاثیر ساکارومایسس سرویزیه به آرد گندم به ترتیب ppb 30 و 8/0 بودند. نتایج آماری نشان داد که افزودن ساکارومایسس سرویزیه باعث کاهش غلظت سیترینین در نمونه های آرد شد (05/0> P).
نتیجه گیری: جهت کاهش مواد مختلف آلوده کننده نان مانند مایکوتوکسین ها، می توان از روش های بیولوژیکی که کم هزینه تر و بی خطر می باشند استفاده نمود.
Background & Objective: Citrinin mycotoxin is produced by filamentous toxin producing fungi. Saccharomyces cerevisiae yeast has the ability to bind mycotoxins to its cell wall and thus reduce its toxicity. The aim of this study was to determine the amount of Citrinin mycotoxin and its reduction in wheat flour by Saccharomyces cerevisiae.
Method: In this study, 15 samples of wheat flour were randomly collected from the bakeries in the city of Babol. The amount of Citrinin contamination in samples was assessed by direct competitive ELISA measurement and then Saccharomyces cerevisiae was added to wheat flour. The amount of Citrinin contamination in the samples was measured by direct competetive ELISA for a second time. SPSS software (version 18), Kolmogrov-Smirnov test and paired t-test was used for statistical analysis of data. The significance level for all tests was considered less than 0.05.
Results: The highest and lowest concentration of this toxin in the studied samples were 35.5 and 1.1 ppb respectively, and after the effect of Saccharomyces cerevisiae on wheat flour, 0.8 and 30 ppb respectively. The statistical results showed that the addition of Saccharomyces cerevisiae decreased the amount of Citrinin in flour samples (P<0.05).
Conclusion: Bread is among the most important and necessary food. To reduce its contaminating materials such as mycotoxins, less expensive and safe biological methods can be used.
